Guyanese Chow Mein

No Guyanese celebration is complete without a big tray of chow mein. A legacy of Guyana’s Chinese community, this stir-fry of springy noodles, seasoned chicken, shrimp and crunchy vegetables is the dish everyone reaches for first at any party.

Ingredients

  • 1 lb chow mein noodles (or thin egg noodles)
  • 2 chicken breasts, thinly sliced
  • 1/2 lb shrimp, peeled (optional)
  • 2 carrots, julienned
  • 1 cup shredded cabbage
  • 1 cup string beans (bora), cut in pieces
  • 1 sweet pepper, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 3 stalks scallion, chopped
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1/2 tsp sesame oil
  • 3 tbsp oil
  • Salt and black pepper to taste

Instructions

  1. Boil the noodles until just tender, drain, rinse with cold water, and toss with a little oil so they don't stick. Set aside.
  2. Season the chicken (and shrimp) with a little soy sauce, garlic, salt and black pepper.
  3. Heat 1 tbsp oil in a large wok or pan over high heat. Stir-fry the chicken until cooked, then the shrimp until pink. Remove and set aside.
  4. Add the remaining oil and stir-fry the onion, garlic, carrots, string beans, cabbage and sweet pepper for 3–4 minutes — keep them crisp, not soft.
  5. Return the chicken and shrimp to the pan. Add the noodles, soy sauce, oyster sauce and sesame oil.
  6. Toss everything together over high heat until well combined and heated through. Adjust seasoning.
  7. Stir in the scallion and serve hot.

  • Keep the vegetables crisp — chow mein should have crunch, so don't overcook them.
  • High heat and quick tossing keep the noodles from going soggy.
  • Bora (long beans) are the traditional choice, but green beans work fine.
  • Make it your own with extra veg, or add Chinese sausage for special occasions.
